Can eating fried fish in grape seed oil or olive oil daily be healthy?

My mother-in-law swears that as long as you eat fish fried daily, in certain types of oil, paired with red wine and a salad with any dressing on the side, will keep us healthy and trim. My husband is up for it, I'm not convinced. Oh yeah, she flours the fish, if this makes a difference in the answer.Can eating fried fish in grape seed oil or olive oil daily be healthy?
