How often do you fry with the left over olive oil?

I have started deep frying with EVOO substituting it for corn oil.


But Being the thrifty ME, I re-use EVOO for the same type of food I wish to fry but I add more of it each time.


Is it bad?

Trans fatty acids are formed when oil is heated to high temperatures. Olive oil isn't quite as bad as corn or sunflower oil in terms of heat stability, but it is still unstable enough that you shouldn't re-use it. EVOO in particular is more unstable than refined olive oil, because EVOO contains traces of gums and free fatty acids that can ignite at relatively low temperatures. Peanut oil is better because it contains 25% saturated fat, which lends heat stability.





For deep frying, I would strongly recommend you do not use EVOO. It's better to use refined olive oil, canola oil, or peanut oil.How often do you fry with the left over olive oil?
Olive oil gives its taste and evoo has a low smoke point. try peanut oil or veggie oil.





I dont reuse oil because the oil has the flavor it was cooked in.
EVOO has a smoke point of 295 F. Fryers typically are set at 350 -400 F. So, if you want to set fire to your kitchen, then go ahead and use the EVOO.





Also, burning or smoking oil is carcinogenic. Peanut oil has the highest smoke point, thus it is the healthiest. Rice oil is good, too.





Fry oil should be changed when you can no longer see the fry basket when it is immersed in the oil.
If you are frying the same type of food, it is okay to reuse it. Otherwise,no because the oil will pass on the taste of whatever it was used for before.


Discard it when your nose tells you to. Have you never gone into a restaurant and smelled stale cooking oil? Yuk. I turn and walk out.
